Cactus Blue Mexican Restaurant Opened December 27, 2004 and within months of opening, Cactus Blue was named “Best Mexican in the Valley.” Since then, we have received the title annually from at least one local publication, including Lehigh Valley Style, Lehigh Valley Magazine and The Morning Call.
